Preserving Eggs

I suppose that, in the future, when I have enough hens on my homestead to give me an abundance of eggs, it will be nice to know how to preserve them for winter use. I have learned how to freeze the eggs:

Yesterday I froze two dozen eggs. This is simple. I crack an egg into a bowl, break the yoke and stir a couple of times, dump it into a snack size baggie, and gently squeeze out the air and seel. I did this with the two dozen eggs, then put them all into a gallon size freezer bag.

The eggs were free. I can add more to the freezer bag. And I will use these during the winter months in baking or when making scrambled eggs. Each baggie has 1 large egg in it.

  2. Do you still freeze eggs? Just wondering if the quality (especially for cooking a scrambled egg or omelet) is what you’d expect from a fresh egg? I am JUST starting out on my homesteading adventure as a single mom, and chickens are gonna be a while, but I’d like to know, b/c I’ve never heard that you could freeze the eggs before. Thanks!
